Cornbread worth making

4 slices bacon

1 TBL butter

1 cup flour

1 cup cornmeal

1 TBL baking powder

1 1/4 cups buttermilk

1/4 cup vegetable oil

1 egg

1/4 cup brown sugar

1/2 tsp baking soda

1 cup shredded colby jack or cheddar

salt if desired

Preheat to 375. Cook the bacon in a 9 inch cast iron skillet until crisp. Remove to a paper towel to drain. Add the butter to the skillet. In a large bowl combine the flour, cornmeal, baking powder and salt. In another bowl whisk the buttermilk, oil, egg, sugar and baking soda until blended. Fold the wet bowl into the dry bowl and lightly mix, do not overdo. Fold in the cheese.

Now you can dump this into the buttered hot pan and crumble the bacon over the top. Bake for about 30 minutes or until nice and brown. After it cools just a bit you can cut it into wedges to serve.
