Cornbread worth making

4 slices bacon

1 TBL butter

1 cup flour

1 cup cornmeal

1 TBL baking powder

1 1/4 cups buttermilk

1/4 cup vegetable oil

1 egg

1/4 cup brown sugar

1/2 tsp baking soda

1 cup shredded colby jack or cheddar

salt if desired

Preheat to 375. Cook the bacon in a 9 inch cast iron skillet until crisp. Remove to a paper towel to drain. Add the butter to the skillet. In a large bowl combine the flour, cornmeal, baking powder and salt. In another bowl whisk the buttermilk, oil, egg, sugar and baking soda until blended. Fold the wet bowl into the dry bowl and lightly mix, do not overdo. Fold in the cheese.

Now you can dump this into the buttered hot pan and crumble the bacon over the top. Bake for about 30 minutes or until nice and brown. After it cools just a bit you can cut it into wedges to serve.

Hi and welcome to our Gingerbread House Workshop, get ready to have some fun! When you come to the workshop everything you need to make a wonderful, full size, totally edible gingerbread house will be waiting for you. I make the gingerbread with all freshest ingredients and it contains NO hydrogenated oils. The pieces of the house will be baked and ready for you to assemble. Along with the frosting there will be a few basic candies that can adorn your masterpiece. Available will be; small candy canes,red and green M&M’s, jelly beans and flaked coconut should you desire a snowy covering. Any other candy that you would like to bring would be great. I personally like a roof made of Necco Wafers (it looks like tile), this takes about 5 rolls. Some other interesting options; ribbon candy, licorice, hard christmas candy, chocolate Santa’s etc. Use your imagination.

Coffee and tea will be served during the whole class. If you prefer wine, feel free to bring some. I’ve seen some pretty unique houses occur after a bottle of wine.

You can come on your own, or get a group together and book a workshop just for you. I’m very flexible about the days and/or evenings so just give me a call.

$25 covers the house and instruction. These houses make great family gifts so it’s a win win situation. You get a night out with friends, lots of laughs and a gift to cross off your list.

I have found that by using 1 cup cake flour and 2 1/2 cups regular flour I get a far superior pizza dough. Great to work with too.
